Cacao-Chocolate Chip Buckwheat Pancakes and Fruit Salad

The other day my sister called me at 6:30am and told me she was coming over for breakfast. You gotta love how only siblings are allowed to invite themselves over when you’ve been looking forward to sleeping in on your day off all week! At least I didn’t have to shower or do my hair for her! An hour later she shows up in her pajamas! I love spending time with her and spoiling her with nourishing good food. While this recipe contains real, whole food, and is gluten and dairy free, it isn’t quite what I would call proper food combining or candida friendly. BUT, sometimes you just need that heart-warming, food-for-the-soul type meal that satisfies all of your taste buds and keeps your tummy full for hours.

It is simple to adjust the recipe making it more candida friendly and combined well for optimal digestion. If you want to follow proper food combining, have the fruit salad on its own on an empty stomach. To make the pancakes more candida friendly I would replace the organic dark chocolate chips with raw cacao nibs. But no one said you can’t have any chocolate 😉 Raw cacao is chocolate in its purest form and where all its nutritional properties stem from. Raw cacao promotes the growth of healthy gut flora as well as an abundance of other health benefits.

The dressing is sweetened with lakanto, camu camu and essential oils. Lakanto is a sugar substitute that is extracted from monk fruit. I don’t agree with artificial sweeteners as most of them do more harm to your health than good, but monk fruit actually boosts your health and has a ton of health benefits! This sweetener is loaded with antioxidants that help your body fight free radicals that are associated with disease, strengthens your immune system with its high vitamin C content, and reduces inflammation in the body! The best part is lakanto is all natural and non GMO, zero calories, zero glycemic index, does not feed candida, and can be used as a sugar substitute in ANYTHING!

Two of my favourite essential oils that I love to incorporate in my recipes are cassia and wild orange! Cassia is like cinnamon’s cousin (as I like to call it) with their similarities, scent and flavour, but I find it to be much sweeter than cinnamon, reducing the need for added sweeteners. It promotes healthy digestion, supports the immune system, and helps curb those sugar cravings. Wild orange essential oil is loaded with antioxidants that help maintain overall health and is safe to take on a daily basis to cleanse the body. The scent and flavour is absolutely addicting whether it be in recipes, flavouring my water, or just deeply inhaling it for it’s ability to uplift mood and energy!

Camu camu is one of my favourite superfoods! It is a fruit that comes from the amazon rain forest and is the highest source of vitamin C on the planet! It’s flavour is more sweet and sour. Adding this to my Coconut Milk Yogurt Dressing adds a lot more immune system support, but what I love about camu camu is it’s ability to balance mood and how it can safely be used as an effective, natural anti-depressant.

Cacao– Chocolate chip Buckwheat Pancakes
1 cup buckwheat flour
2 tsp organic aluminum free baking powder
2 organic free-range eggs
2 tbsp coconut oil
1 cup water
2 tbsp raw cacao powder
¼ cup organic dark chocolate chips

Mix all the dry ingredients in medium bowl.
In a small bowl, beat the eggs and add the water.
Combine the egg mixture with the dry mixture, mixing well.
Gently fold in the chocolate chips.
Cook on medium heat for about 4-5 minutes per side.

Fruit Salad with Coconut Milk Yogurt Dressing
For the fruit salad I used blueberries, strawberries, apple, orange, and pineapple but you can use an assortment of any fresh fruit you desire.
Coconut Milk Yogurt Dressing
2 tbsp plain coconut Milk Yogurt
1 tsp lakanto
1 tsp camu camu
¼ tsp ground cinnamon
2 drops wild orange essential oil
2 drops cassia essential oil
